I woke up on Saturday thinking about a friend who is going though radiation and the first thing I thought when I thought of her was cupcakes. Cupcakes just have this way of brightening a day. So, I set to work. We were in a bit of a hurry with all our Saturday plans so I had to use what we had in the house and when it came to frosting we had no butter and no powdered sugar. But I found a recipe and we made it work. Well, it took two tries when I accidentally used corn oil instead of corn syrup, but eventually we had a beautiful frosting that tastes just like melted marshmellows!
INGREDIENTS:
2 egg whites
1 1/2 cups sugar
1/8 teaspoon salt
1/3 cup water
2 teaspoons light corn syrup
1 teaspoon vanilla extract
PREPARATION:
Combine all ingredients except vanilla in the top of a double boiler over boiling water. Beat with electric mixer for about 7 minutes, or until mixture will stand in stiff peaks. Beat in 1 teaspoon vanilla extract.
