Chicken with Peanut Sauce

Cook (packaged breaded chicken) according to the package directions; slice.  In a bowl, whisk together 1/2 cup creamy peanut butter, 1/3 cup water, 2 tablespoons low-sodium soy sauce, 2 tablespoons fresh lime juice, 1 tablespoon brown sugar, and 1 tablespoon grated fresh ginger until smooth.  Serve with cut-up carrots and cucumbers and the chicken.
