- 1/2 avocado + 1/3 cup cream cheese on bread
- chunks of ripe banana or avocado rolled in crushed oat cereal
- Root Veggie Medley: preheat oven to 400*peal sweet potato, 2 parnsips, 2 carrots*cut*put in baking dish(ceramic/glass)*drizzle with evoo*sprinkle with rosemary, salt, pepper*toss*roast 15-20 minutes
- Minced Pork & Pear: medium heat* 1/2 cup low-sodium broth to simmer* add 1/2 lb pork cutlets cut into 1/2 inch cubes 3 minutes*in small mixing bowl toss 1/2 pear peeled and chopped with 1/8 tsp nutmeg*add pear to pan, cover, simmer until soft (3 min)*drain and reserve liquid*blend pork*mash pears*add liquid as needed
- Blackberry & Ricotta Parfait: puree 1 cup blackberries*sieve*stir together 1/2 cup ricotta cheese, 1/8 tsp nutmeg, 1/8 tsp cinnamon*alternate layers of blackberry and ricotta mixture
- Asparagus Spears with Feta: preheat oven to 400 and line baking pan with aluminum*snap off woody ends (1 lb) and drizzle with oil (2 tbsp), sprinkle with salt (2 tsp)*roast 8-10 minutes *sprinkles with 1/3 cup feta cheese

- Pumpkin Soup with Alphabet Pasta: medium heat melt 1 tbsp butter, add 1 tbsp onion diced and cook 30 seconds* add 1 cup pumpkin puree, 2 cups low-sodium chicken broth, 1 tbsp applesauce, 1/8 tsp allspice, 1/8 tsp thyme and bring to boil*add 1/4 cup alphabet noodles and cook until tender (8-10 minutes)
- Corn and Salmon Chowder: Peel and dice 1/2 lb red tomatoes, 1/4 cup onion, 1 celery rib, 1 peeled carrot, mince 1 clove garlic*heat 1 tbsp oil and add onion, celery, carrot, garlic, 1 bay leaf and saute until golden (5-7 minutes)*reduce heat to medium lo, cover, cook, stirring occasionally for 10 minutes*1 1/2 cups broth, potatoes, increase heat to high, bring to boil*reduce head to medium-low and simmer for 12 minutes* cut salmon fillet into 1 inch pieces*puree 1 1/2 cup whole milk and 1 cup corn in blender* add puree, 1/2 cup corn, and salmon to pot, return to medium heat and simmer 5-7 minutes*season with salt and pepper
- Chicken and Mango Quesadillas: 375*two whole wheat tortillas brushed with oil, sprinkle with cheese, chicken, mango, cheese*bake 10 minutes, turn cook 5*serve with salsa and or sour cream
