Petite French Toast Souffle Recipe

1 small loaf of french bread, cut into 1-inch cubes (5 cups)
4 large eggs
1 cup of half-and-half
1/4 cup of maple syrup (plus more for serving)
1 teaspoon of vanilla
2 teaspoons of cinnamon

For Serving :
1/4 cup of powdered sugar
maple syrup

In a large bowl, whisk together eggs, half and half, maple syrup, vanilla and cinnamon...
  Add bread cubes and toss until all of the cubes are coated.  Pour into individual ramekins or one souffle dish.
Cover and chill in the refrigerator for at least 1 hour and up to overnight.  Bake at 375 degrees for 20-25 minutes (for individual ramekins), 30-35 for one larger souffle.
Serve warm with powdered sugar and maple syrup.

German Pancakes

Ingredients:
3 T melted butter
1/2 c. flour
1/8 t salt
1/2 t vanilla
1 T sugar
1/4 c milk
3 eggs

Directions:
Preheat oven to 400 degrees
Place melted butter in an 8×11 pan. You could also just place the butter in the pan and put it in the oven to melt while you mix up the other ingredients.
Mix flour, sugar, salt in medium sized bowl. Add milk, vanilla and beat in ONE egg at a time.
Pour mixture over melted butter and bake 15-20 min. The pancakes will rise up really high in the corners and then fall down after it has been taken out. It’s really fun for the kids to watch!
Enjoy with candy syrup, maple syrup, jam or cinnamon sugar.

Mom's Pumpkin Muffins


2 eggs
1 cup sugar
3/4 oil
1 1/2 flour
1 t powder
1 t soda
1/2 t salt
1/2 t nutmeg, ginger, cinnamon
1 c pumpkin
sprinkle top with cinnamon and sugar
350 for 11 minutes

Egg and Oatmeal Breakfast

from trainer for healthy breakfast

  • 1/4 cup wheat bran + 1/3 cup oats + 3/4 egg whites + 1/4 tsp baking powder
  • add for flavor: stevia, vanilla, almond extract, banana extract, lemon, poppyseed
  • 450 for 12-15 minutes

Red, white, and blueberry breakfast smoothie

Yeilds 3 cups

6 oz low fat organic vanilla yogurt
4 ripe strawberries, stemmed, sliced
1/2 cup blueberries
1 tbsp. oat bran (optional)
4 oz. cranberry juice
1 tbsp. honey
1 tbsp. lime juice
1/2 cup crushed ice

combine all ingredients in a blender and puree until smooth

Oatmeal Pancakes With Sauteed Cinnamon Apples

Found this in the Oregonian today - looks good and healthy
Pancakes: 1/2 cup old-fashioned oatmeal, uncooked
1/2 cup whole-wheat flour
2 tablespoons wheat germ
2 tablespoons firmly packed light brown sugar
2 teaspoons backing powder
1/4 teaspoons cinnamon
1/4 teaspoon salt
1 egg
1 cup whole milk (as needed)

oven to 250 and place large baking sheet in oven
large bowl - whisk oatmeal, flour, wheat germ, sugar, baking powder, cinnamon, salt
wisk in the egg and enough milk to combine the mixture
heat griddle over medium heat and brush with butter.
pour 1/4 cup batter (cook about 2 minutes - bubbles form and bottom is light brown)
flip - one minute
place on baking sheet in oven to keep warm

2 tablespoons unsalted butter
2 tablespoons brown sugar
2 medium apples - peeled cored and sliced
1/4 cup chopped walnuts
1/4 teaspoon cinnamon

skillet over medium heat melt butter.
add sugar and stir with wooden spoon to dissolve
add the apples, walnuts and cinnamon and cook for 6 minutes, or until apples are soft.

Breakfast

Pumpkin Pancakes - these are delicious! I like these because they make for thick pancakes, and thus the syrup doesn't make them too soggy.
1 1/4 cup flour
2 Tbsp. sugar
2 tsp. baking powder
1/2 tsp. each of cinnamon, ginger, and saltpinch cloves
1 cup milk
6 Tbsp. pumpkin puree
2 Tbsp. melted butter
1 egg
Sift together the flour, sugar, baking powder and spices. In a seperate bowl, mix the milk, pumpkin, butter and egg. Fold together and cook on a greased griddle over medium-to-medium-high heat. Use about 1/4 cup batter for each pancake.
