New Chicken Curry



1.
Heat 1 tablespoon of the oil in a large skillet over mediumhigh heat. Add the chicken and cook, stirring occasionally, for 5 minutes, or until browned. Remove to a plate and keep warm.

Heat the remaining 1 tablespoon of oil in the same skillet over medium-high heat. Add the onion, pepper, curry powder, and allspice and cook, stirring occasionally, for 5 minutes, or until the vegetables are tender.
3.
Stir in the tomatoes (with juice), raisins, and chicken. Bring to a boil. Reduce the heat to low, cover, and simmer for 5 minutes, or until chicken is no longer pink.
